I can’t believe it’s Monday already. Most people hate Mondays, and I can totally relate to that feeling. When we hear “Monday”, most people automatically think about the long week ahead consisting of work, school, and endless extracurricular responsibilities. The amount of stress that most of us have to deal with on a daily basis is rough.
Today I decided to look at Monday as a positive day. Yes, I do have a long week ahead of me with so many things that I need to accomplish but I am not going to let that change the midframe that I set myself up for today. Today marks a fresh start to a new healthier and better me. I am sure many of you could relate to starting off fresh on Mondays. We say stuff like ” I am going to enjoy myself today because on Monday, I am going on a diet”. I have done that more times than I would even like to admit.
So, how am I going to create this new version of myself? The simple answer is that I am going to take it one day at a time. I have noticed that if I break things that I need to do into smaller tasks, I am able to accomplish things and feel a sense of success. So, to tackle my weight loss goal, I signed up with this app called Healthi. It counts “bites” for the food you eat. It’s very similar to WW but it is a lot cheaper. I am just looking to lose 5 pounds at a time. Using this app and doing my Beachbody workouts each day should help me reach my goal.
One problem that I face each day is drinking enough water. I barely get one glass down each day. I know that this is something that isn’t good for me so it’s another area that I am going to try and improve. I bought this water bottle from Amazon to help me. I like that it is insulated so that I could drink cold water throughout the day. There is nothing I hate more than filling up a large bottle of water and it becomes room temperature halfway through my day. I am very excited to use this.
Another tool that will come in very handy today is my Instant Pot. Do you have one of these? If not, this is a MUST for every household. This is the one that I have. My children and I have a very busy day planned today which means that I will be in a rush in the morning to get the kids ready and still eat a healthy meal.
This is what I plan on making for breakfast today using my Instant Pot.
Instant Pot Apple Cinnamon Oatmeal– Serves 4
This one is my recipe and it’s a favorite with everyone in our house. It’s actually the only oatmeal that both my kids and my husband will eat.
Ingrediants:
- 1 cup Old Fashioned Oats (1 minute Oats work too)
- 1 tsp cinnamon
- 2 tablespoons brown sugar
- 1 apple cut up into small pieces
- pinch of salt
- 2 cups of water.
I use a separate bowl to cook the oatmeal in. I find that if I put the oatmeal right into the Instant Pot, I get a burn notice and it is very hard to clean up. You can try and do it in the actual instant pot and see what happens. I am just giving you a heads up from the experience I have had. I use a bowl like this one:
It’s so easy to make this oatmeal. You just mix all the ingredients together and put it in the instant pot. (See the picture of the bowl above for how to do this). I cook mine on high with the pressure cooker setting. I set the timer for 10 minutes. When the oatmeal is finished cooking, I use the quick release. Once you can open the pot, it is ready to eat!!!
Serving Size- 1/2 cup of cooked oatmeal is 3 bites (3 WW points).
